How to make XO Fried Rice

Dad's XO Fried Rice

If you've ever wondered where to start with XO Sauce, we always recommend cooking XO Fried Rice. There's so many variations of fried rice, and you can make it your own – this is Dad's version of an XO Fried Rice. Simple ingredients that let the XO Sauce to come through.

Servings: 2

Ingredients

  • 2 cups rice
  • 1 egg
  • 2 oz Chinese broccoli stem (thinly sliced)
  • 1 tbsp green onion (thinly sliced)
  • ¼ tsp chicken bouillon powder
  • ¼ tsp salt
  • ¼ tsp white pepper
  • ½ tsp soy sauce
  • ½ tsp sesame oil
  • 1 tbsp Sun Yum XO Sauce
  • 1 tbsp cooking oil

Steps

1. Blanch sliced Chinese broccoli stems for 15 seconds.

2. Heat wok or pan over high heat. When wok or pan is hot, add 1 tbsp of cooking oil. Add an egg and scramble until about 60% cooked.

 

3. Add in 2 cups of rice. Mix well with the scrambled eggs. Press the rice mixture into the wok or pan until the rice grains are evenly separated.

 

4. Fold in blanched Chinese broccoli stems. Stir in chicken bouillon powder, white pepper, and salt. Clear area in wok or pan to add in Sun Yum XO Sauce for a few seconds and mix in well.

 

5. Mix in chopped green onions, sesame oil, and soy sauce. 

 

6. Plate, garnish with some more XO Sauce, and enjoy!

Tips & Notes

  • High heat is your friend, keep it high and continuously stir fry to avoid ingredients sticking to pan or burning
  • If needed, you can turn the heat low when adding ingredients and seasoning
  • How to customize – add protein, such as shrimp or chicken. Protein should be cooked first, set aside, and incorporated towards the end
  • Vegetable substitutions – snap peas (small diced), American broccoli stem, peas, carrots or corn
