How to make Green Beans with XO Sauce
Do you know the secret to getting those crunchy, yet tender green beans at Chinese restaurants?
One of our favorite ways to use XO Sauce is in a quick veggie stir-fry. These stir-fried green beans are crisp, flavorful, and come together in minutes! The secret is flash-frying the green beans over high heat so they blister slightly while staying tender with a satisfying crunch.
This dish is especially delicious when my mom harvests fresh green beans from her backyard garden. And since my dad has a wok setup outside, we get to recreate restaurant-style meals at home. Even if you don't have a wok, you can still flash-fry green beans in a large pot and achieve a similar result.
Ingredients
- ½ lb green beans (cut 3" long)
- 3 cups frying oil
- 1 tsp garlic, minced
- 1 quarter of small white onion, julienned (optional)
- 1 quarter of red bell pepper, julienned (optional)
- 1 ½ tsp Sun Yum XO Sauce
- 1 tsp cooking wine
- 1 ½ tsp soy sauce
- 1 tsp oyster sauce
- ½ tsp sugar
- ½ tsp chicken bouillon powder
- dash of sesame oil
Instructions
- Heat about 3 cups of frying oil to ~300°F in wok or large pot
- Flash fry green beans in oil for about 10 seconds, strain green beans and keep aside (oil can be reused for future flash frying)
- After removing oil from wok or large pot, add white onion, red bell pepper and garlic. Stir fry on high heat for 20-30 seconds
- Add in XO Sauce and mix well
- Add in green beans and cooking wine. Stir fry and mix well
- Turn to low heat, and add oyster sauce, sugar, chicken bouillon powder, and soy sauce
- Turn to high heat, stir fry and mix well until fragrant
- Finish with a dash of sesame oil
